Grapes: Nero d’Avola 100%.
Zone of production: Fulgatore - Erice.
Exposure: south est.
Average age of vines: 10 years.
Cultivation: espalier at a density of 4000 plants per hectare.
Production: 7 T. grapes per hectare.
Grape Harvest: manual, in the first 10 days of September.
Vinification: destalked, vinification in red with traditional soft pressure of the skins and maceration at a controlled temperature of the skins and maceration at a controlled  temperature of between 25 - 28° C. Malolactic fermentation in stainless steel, cold bottling and refining in the bottles for 4 months.
Notes: the colour of Capo Soprano Nero d’Avola, is an intense ruby red.
The perfume recalls notes of blueberries and blackberries.  The taste is full and velvet.
We propose to taste it with medium seasoned cheese, grilled steak, and the Japanese tempura with vegetables.
