Grapes: Catarratto 60% - Chardonnay 40%
Altitude: 250/300 mt. above sea level.
Density: 4.000/4.500 plants per ha.
Production technique: harvesting in boxes. Destalked, cold maceration of the skins with the must (4°C). Soft press of the grapes and controlled fermentation.
Colour: yellow straw colour with gold reflection.
Perfume: perfumes intense fruity.
Taste: harmonious full persistent flavour, recalling the mature fruit.
Bottle: 75 cl - 12,5% Vol. Best served at: 9 ° C.
Accompaniment: ideal served as aperitif, excellent with first and second fish course, risotto of seafood and bass with salt rind.
