Area of production: West Sicily, hilly area situated in the north of the province of Trapani
Grapes: Insolia 60% - Chardonnay 40%
Altitude: 350/400 mt. above sea level.
Density: 4.000/4.500 plants per ha.
Production technique: harvesting in boxes, destalked, cold maceration of the skins with the must (4°C). Soft press of the grapes and very slow temperature controlled fermentation. Cold bottling.
Colour: yellow gold with light green highlights.
Perfume: full refined and elegant. With a mild hint of exotic fruit, honeysuckle and acacia.
Taste: complex and persistent, full and harmonious.
Bottle: 37,5 - 75 cl - 12,5% Vol. Best served at: 9 ° C.
Accompaniment: it is excellent with freshly caught fish and crustacea. Ideal with cous cous with crustacea.
